Mediterranean Stuffed Avocados is simple and delicious all rolled into one.  I've combined some of my favorite flavors and ingredient in a perfectly ripe avocado to create what I think of as the perfect light meal for breakfast, lunch, dinner or a mid-day snack.

The beauty of this dish is it's experimental.  Use your favorite ingredients when creating a combination that is right for you.  How about adding a little smoked salmon and capers to the mix?  What about goat cheese and olives instead of pomegranate and feta?  No matter how you stuff your avocado, this healthy dish will satisfy the "I want something good but healthy" craving any time of the day.

Mediterranean Stuffed Avocado Yum
Mediterranean Stuffed Avocado is avocado at it's best! A pleasing combination of tomatoes, feta cheese, fresh cucumbers, and juicy pomegranate seeds lightly tossed with herbs, olive oil, and white wine vinegar for a mouthful of goodness with every bite.

  1. In a small bowl, combine the cucumbers, pomegranate seeds, feta cheese, tomatoes, olive oil, white wine vinegar, dried basil, salt and pepper. Lightly toss with a spoon until combined.
  2. Spoon half of the mixture into each avocado halve. Serve immediately.
