One of my very favorite easy to make breakfast meals is this creamy tarragon and lime avocado toast topped with a warm poached egg. It’s all the goodness of breakfast wrapped up in a perfectly dreamy meal.
The thing about avocados is – you have to eat them as soon as they ripen. Wait a few days too long and in the garbage they go. There’s just no redeeming an overly ripened brown avocado so as soon as they turn perfectly soft it’s game on! In the summer, I buy avocados as much as I can since they are in abundance and much more affordable than in the winter months.

But, my all time favorite way to enjoy avocados for breakfast is this Poached Egg and Avocado Toast recipe. One note about making it. Though I have given you measurements, the avocado is the star of the show in this dish so make sure you season the mashed avocado with the tarragon, lime juice, and the salt and pepper in layers so you build the perfect balance of flavors that speaks to your palate best.
