Homemade Applesauce Pancakes

Saturday mornings are for pancakes topped with slabs of butter and plenty of fruit jam. My secret ingredient for making the perfect pancakes is non-other than applesauce. Made with fresh, simple ingredients, homemade applesauce pancakes are a healthier version of everyone's favorite breakfast food. Adding (organic)  applesauce to the batter creates a tender, fluffy, flavorful pancake so delicious it's hard to enjoy only a few.  If you have dairy or gluten intolerant eaters, you can substitute ingredients with gluten-free flour and dairy-free milk of your choice.

I love to double the batch and make extra for my family to enjoy for breakfast on the following morning. These pancakes also freeze well. Once they are cooled, lay them in a zip lock freezer bag and freeze for up to three months. When you are ready to enjoy them, either toss them in your toaster, microwave or oven for a few minutes and your breakfast is ready to enjoy.

Instructions
  1. In a large bowl combine the flour, baking powder, and salt.
  2. In a medium bowl whisk together the eggs, milk, and vanilla before stirring in the melted butter.
  3. Pour the liquid ingredients into the dry ingredients and stir until completely combined. Stir in the applesauce.
  4. Heat a griddle or non-stick pan over medium heat and melt 1 tablespoon butter.
  5. Ladle batter onto the skillet or pan and cook the pancakes for 2-3 minutes per side or until they brown to your liking.
