One of my very favorite easy to make breakfast meals is this creamy tarragon and lime avocado toast topped with a warm poached egg. It's all the goodness of breakfast wrapped up in a perfectly dreamy meal.
The thing about avocados is - you have to eat them as soon as they ripen. Wait a few days too long and in the garbage they go. There's just no redeeming an overly ripened brown avocado so as soon as they turn perfectly soft it's game on! In the summer, I buy avocados as much as I can since they are in abundance and much more affordable than in the winter months.

But, my all time favorite way to enjoy avocados for breakfast is this Poached Egg and Avocado Toast recipe. One note about making it. Though I have given you measurements, the avocado is the star of the show in this dish so make sure you season the mashed avocado with the tarragon, lime juice, and the salt and pepper in layers so you build the perfect balance of flavors that speaks to your palate best. It's just right when the combination of flavors burst in your mouth with deliciousness. I hope you enjoy this recipe as much as I do!

- 1 ripe avocado
- 1 teaspoon finely chopped tarragon
- 1 tablespoon lime juice
- freshly cracked salt and peper
- 2 slices sour dough or gluten-free bread
- 2 teaspoons extra virgin olive oil
- 1 whole fresh garlic clove
- 2 large eggs

- Begin by making the avocado spread by mashing the meat of the avocado with a fork in a small bowl. Add in the tarragon, lime juice and freshly cracked salt and pepper to taste.
- Drizzle olive oil over 2 slices of bread. Gently rub both tops of the bread with a fresh garlic clove to infuse flavor. Heat the oven to broil and toast bread slices on a cookie sheet until toasted evenly being careful not to let them burn.
- Spoon the avocado spread over the toast slices and lay on a serving plate.
- Poach the eggs, making sure to keep the yolks soft inside. Carefully transfer the eggs to the top of the avocado toast and top with freshly cracked salt and pepper. Serve immediately.
