I’m a big fan of quick and easy on nights when my family is off and running to the next thing. Japanese Udon Mediterranean bowl is a great recipe when you want something quick, light, and healthy. If you are gluten-free, trade-in Udon for Soba noodles and in 15 minutes you’re ready to eat!

I like to change things up each time I make this dish. Since I am a huge fan of Mediterranean flavors, one of my favorite ways to enjoy this dish is with kalamata olives, thinly sliced red onions, a splash of goat cheese crumbles, and I like to include the crunchy texture of freshly steamed haricot verts and/or green peas. Honestly, you can't go wrong. Grab what's left in your fridge, or create your own version of my Udon Mediterranean bowl and you'll be ready to enjoy it in 15-minutes or less.

Ingredients
- 1 package Udon Noodles use Soba noodles for gluten-free
- 2 cups broccoli florets
- 1 1/2 cups sliced fresh mushrooms
- 12 cherry tomatoes, halved
- 2 green onions, chopped
- 2 garlic cloves, minced
- 4 teaspoons feta cheese, crumbled
- 4 tablespoons olive oil, divide
- salt and pepepr

Instructions
- Bring a pan of water to a boil over high heat. Add the Udon or Soba noodles to a boil according to the directions on the package. Strain the noodles in a colander, drizzle 1 tablespoon olive oil over noodles and toss. Add the desired serving on each plate.
- While the noodles cook, bring a pan of water to a boil and blanch the broccoli for 2 minutes. Strain and rinse with cool water to stop the cooking process.
- Heat 3-tablespoons oil in a saute pan over medium heat. Add the mushrooms, and sautee 3 minutes or until softened. Add the garlic and green onions, sauteeing an additional 2 minutes. Toss in the broccoli and tomatoes and saute for 1 minute. Remove the pan from the heat. Add salt and pepper to taste.
- Spoon the vegetables over the noodles and top with feta cheese.
