GF/DF Quinoa with Black Bean and Corn Salsa Yum

Instructions
  1. Boil 4 cups water, add in quinoa and cook. Remove from heat and set aside to cool.
  2. In large bowl, combine black beans, corn salsa, avocado, tomatoes, onions and cilantro.
  3. In small bowl, whisk together lime juice, olive oil, salt and pepper. Pour it over beans and corn mixture and lightly toss.
  4. When cooled, add quinoa to bowl and gently toss all ingredients together until well combined. Serve warm or cold.
