- 1/4 cup freshly squeezed lemon juice
- 3 cups filtered water
- 1/2 cup light olive oil
- 1 1/2 teaspoons sea salt
- 1 garlic clove, minced
- 1/2 fennel bulb, thinly sliced
- 1 scallion, sliced
- 1/4 cup cilantro, chopped

- In medium bowl, whisk lemon juice, garlic, oil, salt and water.
- Add fennel, onions, cilantro and stir to combine.
- Chill before serving.
