  1. In medium pan, add olive oil and simmer on medium heat.
  2. Add onions, and saute 3-4 minutes or until translucent.
  3. Add garlic, thyme, salt and pepper, sauteing for 3 minutes.
  4. Stir in pumpkin and chicken broth.
  5. Cover and simmer for 15-20 minutes, stirring occasionally.
  6. Season to taste and serve hot.
