After testing a new recipe for homemade za'atar, this aromatic herb blend is responsible for the magic behind this dish. Stuffed pita with mozzarella and za’atar is one of my new favorite small bites. A quick and easy appetizer perfect for last-minute guest, small or large gatherings, and game night.  Stuffed with melted mozzarella cheese, I coat the soft pita bread with the freshly made za’atar (recipe in my book; It Begins at The Table), bake, roll and halve before serving it warm.  You can make this recipe both gluten-free and dairy-free by using corn tortillas and dairy-free cheese.

STUFFED PITA WITH MOZZARELLA & ZAATAR Yum
Fresh Pita bread stuffed with cheesy mozzarella and slathered with aromatic Zaatar creates a unique and delicious appetizer or side to any meal.

  1. Heat oven to broil.
  2. Generously spread zaatar over top of each piece of pita bread. Lay zaatar side down on baking sheet. Sprinkle cheese evenly over each pita and transfer to oven. Broil 1 to 3 minutes or until cheese is melted. Be careful not to let the bread burn.
  3. Remove tray from the oven, carefully roll each pita up tightly and transfer to a cutting board. Slice each pita in half on the diagonal. Serve warm.
