Mushroom and Shrimp Cajun Black Beans and Rice was an inspiration that came to me right after whipping up a batch of my favorite DIY Cajun Spice.  Since I am to the point where I can barely fit another bottle of spice in to my spice drawers, I decided to get creative and put a dent in the batch with a few new recipe ideas.

It’s always an adventure trying to create something brand new using only the limited ingredients on hand in the fridge.  Sometimes it works, and sometimes…. mmm… not so much.  Ever been there?  However, this time culinary luck was on my side and what culminated from a random selection of ingredients was seriously delish!

The combination of tender mushrooms and fresh shrimp tossed into a bed of Cajun spiced black beans and rice really is the perfect side to fish, Chicken, beef or just about any meal.  I created the recipe to have the perfect balance of flavors without using too much cajun spice which sometimes can over-power a dish.  However, if you like a nice kick of heat to your food, by all means, pump up the spice to the level that best suits your taste.  I suggest making it according to my directions first and then adjusting the flavor in the end so you can control the final results better.  

The other dish I made by putting a dent in my DIY Cajun Spice are my tender, juicy Cajun Spiced Fried Chicken Tenders.  Super simple to make and pairs perfectly with the Mushrooms and Shrimp Cajun Black Beans and Rice.  The entire meal was a huge hit with my family and the good news is, since there are only four of us, there are still plenty of left-overs to eat tomorrow! Mushrooms and Shrimp Cajun Black Beans and Rice Yum
The combination of tender mushrooms and shrimp tossed into a bed of cajun spiced black beans and rice is the perfect compliment to fish, chicken, beef or just about any meal.

Instructions
  1. Heat oil in saute pan over medium-high heat for 30 seconds.
  2. Add onion and saute 3-4 minutes or until lightly translucent.
  3. Add garlic and continue to saute 30 seconds before adding in mushrooms and jalapeno. Saute 3-4 minutes or until mushrooms are soft.
  4. Sprinkle in 1/2 teaspoon salt and cajun seasoning, stirring well until combined.
  5. Add in black beans and shrimp, stirring until shrimp is slightly soft.
  6. Stir in rice until ingredients are combined.
  7. Gently toss in remaining 1/2 teaspoon salt and cilantro until evenly distributed.
  8. Transfer to a serving bowl and serve warm.
Recipe Notes

-Add additional 1/2-1 teaspoon cajun seasoning if you like a lot of heat.
-Serve with Cajun Fried Chicken
