Mushroom and Shrimp Cajun Black Beans and Rice was an inspiration that came to me right after whipping up a batch of my favorite DIY Cajun Spice. Since I am to the point where I can barely fit another bottle of spice in to my spice drawers, I decided to get creative and put a dent in the batch with a few new recipe ideas.
It’s always an adventure trying to create something brand new using only the limited ingredients on hand in the fridge. Sometimes it works, and sometimes…. mmm… not so much. Ever been there? However, this time culinary luck was on my side and what culminated from a random selection of ingredients was seriously delish!
The combination of tender mushrooms and fresh shrimp tossed into a bed of Cajun spiced black beans and rice really is the perfect side to fish, Chicken, beef or just about any meal. I created the recipe to have the perfect balance of flavors without using too much cajun spice which sometimes can over-power a dish. However, if you like a nice kick of heat to your food, by all means, pump up the spice to the level that best suits your taste. I suggest making it according to my directions first and then adjusting the flavor in the end so you can control the final results better.
The other dish I made by putting a dent in my DIY Cajun Spice are my tender, juicy Cajun Spiced Fried Chicken Tenders. Super simple to make and pairs perfectly with the Mushrooms and Shrimp Cajun Black Beans and Rice. The entire meal was a huge hit with my family and the good news is, since there are only four of us, there are still plenty of left-overs to eat tomorrow!
