Summer brings on a whole new meaning in my kitchen when it comes to food and beverages. Living in Minnesota means warm drinks and comfort food at least eight months of the year, and the idea of a cold refreshing drink outside of a post-workout thirst quencher just doesn’t cross my mind. Since I am one of those people who like to sip on things all day long, I try to concoct fun new beverage combinations to keep things interesting.
Sparkling Ginger Lemonade is one of my new warm weather favorites because of how quick and easy it is to make and aside from the simple syrup; it’s on the healthier side. Happy summer sips!

- 1 cup lemon juice, freshly squeezed
- 2 cups sparkling water
- 1 cup ginger simple syrup
- 1/2 lemon, sliced
- 1/2 lime, sliced
- 1 cup granulated sugar
- 1 cup water
- 1/4 cup ginger, peeled and sliced
- 1/2 cup ice

Ginger Simple Syrup

- In small pan, bring water sugar and ginger to a boil over high heat for 2 minutes. Remove from heat and let sit for 30 minutes. Remove ginger and pour liquid into blender with 1/2 cup of ice. Blend on high for 15 seconds or until all the ice is dissolved.
- Pour liquid into a pitcher, add lemon juice and sparkling water and mix. Add ice, lemon slices and lime slices to garnish.
