olive oil

large white or yellow onion, chopped

garlic clove, minced

dried thyme

30 ounce
Libby’s canned Pumpkin
6
cups
organic chicken broth
1
teaspoon
sea salt
1/2
teaspoon
black pepper
Instructions
In medium pan, add olive oil and simmer on medium heat.
Add onions, and saute 3-4 minutes or until translucent.
Add garlic, thyme, salt and pepper, sauteing for 3 minutes.
Stir in pumpkin and chicken broth.
Cover and simmer for 15-20 minutes, stirring occasionally.
Season to taste and serve hot.
