Ingredients
- 1 tablespoons olive oil
- 1 large white or yellow onion, chopped
- 3 garlic clove, minced
- 1/2 teaspoon dried thyme
- 1 30 ounce Libby's canned Pumpkin
- 6 cups organic chicken broth
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper

Instructions
- In medium pan, add olive oil and simmer on medium heat.
- Add onions, and saute 3-4 minutes or until translucent.
- Add garlic, thyme, salt and pepper, sauteing for 3 minutes.
- Stir in pumpkin and chicken broth.
- Cover and simmer for 15-20 minutes, stirring occasionally.
- Season to taste and serve hot.
