It’s always an adventure trying to create a new recipe idea limited by the ingredients available in my fridge. Sometimes it works, and sometimes.... mm... not so much. However, this time culinary luck was on my side.
The combination of tender mushrooms and fresh shrimp tossed into a bed of Cajun spiced black beans and rice makes the delicious side to fish, chicken, beef, pork or almost any meal. I made the recipe with a nice balance of flavors and Cajun spice which can sometimes overpower a dish. But, if you like a kick of heat to your food, by all means, increase the spice to the level that best suits your taste. I suggest making it according to my directions first and then adjusting the flavor to control the final results.

- 4 tablespoons light olive oil
- 2 cloves garlic, minced
- 1/2 medium onion, chopped
- 6 large mushrooms, rougly chopped
- 1/2 jalapeno, seeded and minced
- 1 teaspoon salt. divided
- 1 teaspoon cajun seasoning
- 15.5 ounce can black beans, drained and rinsed
- 1 cup mini shrimp
- 3 cups cooked rice
- 1/2 cup chopped cilantro
Ingredients

- Heat oil in saute pan over medium-high heat for 30 seconds.
- Add onion and saute 3 to 4 minutes or until slightly translucent.
- Add garlic and continue to saute 30 seconds before adding in mushrooms and jalapeno. Saute 3 to 4 minutes or until mushrooms are soft.
- Sprinkle in 1/2 teaspoon salt and cajun seasoning, stirring well until combined.
- Add in black beans and shrimp, stirring until shrimp is slightly soft.
- Stir in rice until ingredients are combined.
- Gently toss in remaining 1/2 teaspoon salt and cilantro until evenly distributed.
- Transfer to a serving bowl and serve warm.
-Add additional 1/2 to 1 teaspoon Cajun seasoning if you like a lot of heat.
-Serve with Cajun Fried Chicken
