Ingredients
- 3 eggs
- 2 cups granulated sugar
- 1 cup vegetagle oil
- 1 teaspoon lemon extract
- 2 cups grated zucchini
- 3 cups gluten-free baking flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon sea salt

Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Beat eggs.
- Add in sugar and beat until creamy.
- Add oil, vanilla, and lemon flavoring and mix well.
- Add Zucchini and continue beating.
- Add flour, soda, baking powder and salt. Beat until well blended.
- Pour batter into 2 well greased bread pans. Bake for 1 hour or until done.
