If necessity is the mother of invention, then cravings must be the key that opens up the door to necessity.

Sounds a bit complicated, right? But this delightful dip is anything but complicated.

Today, I spent the afternoon in my kitchen creating my next recipe, Jamaican Coconut Toast. After only the first bite I was in foodie love. But because I sometimes like to take food to new levels, I decided to concoct a tropical dip to add another layer of deliciousness to the toast. That’s how this Tropical Cream Cheese Dip was born.

The thing I love most about this dip is its versatility. Using cream cheese as a base, you can really add any of your favorite fruits to custom create a dip that speaks to your pallet. I happen to have fresh pineapple and banana on hand, so I used an equal portion of each mixed with a whipped cream cheese to create a lightly sweet dip with a tropical twist.

Since the coconut toast is a recipe inspired by Jamaica, I wanted to make sure the dip I paired it with complimented the cultural flavors of that country.

What I also love about this dip are its many uses.

Pair it with fresh fruit for a beautiful appetizer. Use it as a custard or pie filling, spread it over pancakes or waffles, fill chocolate shot cups for an impressive addition to your buffet or dinner table.

The possibilities are endless.
