If necessity is the mother of invention, then cravings must be the key that opens the door to necessity. Sounds complicated, right? But this refreshing dip is anything but complicated. Today, I spent the afternoon in my kitchen creating Jamaican Coconut Toast. It was time well spent. Taking it a step further, I created a tropical cream cheese dip to top the toast.
The thing I love most about this dip is its versatility. Using cream cheese as a base, you can add any of your favorite fruits to create a dip that fits your taste. I used fresh pineapple and banana mixed with whipped cream cheese to create a lightly sweet dip with a tropical flair. Since the coconut toast is a recipe inspired by Jamaica, I paired it with flavors that represent that cultural cuisine.
There are many wonderful uses for this dip. Serve it with fresh fruit for a beautiful appetizer. Use it as a custard or pie filling. Spread it over pancakes or waffles. Fill chocolate shot cups for an impressive addition to your buffet or dinner table. The possibilities are endless.
