Black Bean Quinoa Burger Salad

Ingredients

- 1 can cooked black beans
- 1 cup quinoa cooked and cooled
- 1 teaspoon cumin
- 1 small lime juiced
- 1/2 teaspoon cayenne pepper
- 2 cloves garlic minced
- 1/3 medium onion diced
- 2 tablespoons cilantro chopped
- 1 teaspoon sea salt
- 1/2 teaspoon pepper

- 4 cups mixed greens chopped
- 2 tablespoon light olive oil
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1 small red bell pepper sliced
- 1 small yellow bell pepper sliced

Instructions

- In medium bowl, mash black beans with fork until creamy yet chunky.
- Add quinoa, onions, cilantro and spices, mixing together until combined. Form mixture into 4 patties and set aside.
- In medium skillet, heat oil on medium-high heat for 30 seconds or until hot.
- Place patties into oil and fry until browned. Using spatula, carefully turn each patty over and fry until browned. Remove from oil and place on top of salad.
Salad
- In medium bowl, toss together lettuce, bell peppers, olive oil, salt and pepper.
- Separate salad on to serving plates in 4 equal portions.
- Carefully place a burger on top of each plate of lettuce and serve immediately.
Recipe Notes
The burgers will fall apart easily since there is no fat or eggs that keep them together. Using your spatula, tap the edges of each burger together if they begin to fall apart while cooking.
