Berries and Cream Sugar Cookie Pie is a dessert I learned to make after buying my favorite round stonewear baking pan by Pampered Chef. This pan is one of the most versatile cooking pieces I own and this recipe is one I often make with it.
This gorgeous dessert is so simple to make and a definite crowd pleaser. Though you can make your own cookie dough from scratch, I love using Pampered Chef’s suggested pre-made cookie dough when time is short and I need a quick and easy dessert for a potluck or luncheon.
Simply roll out the cookie dough on a round stone or non-stick pizza pan and bake. Once cooled, add the cream cheese spread, take some time to create a beautiful design over the spread using your favorite combination of fruits, and chill until you are ready to serve it. I like to use my pizza wheel for cutting thin wedges. You can get about 16 wedges from a 12-inch round dessert. It’s just sweet enough that you don’t need a large slice to satisfy your sweet tooth. - 16.5 ounces refrigerated cookie dough, room temperature
- 8 ounces cream cheese,softened
- 1/2 cup granulated sugar
- 4 cups fresh fruit, chopped

- Preheat your oven to 350°F.
- Using your hands, roll the cookie dough into a large ball and set it in the center of a round pizza stone or Pampered Chef round stonewear. Roll the dough out towards the ends of the stone to a 12-inch diameter or 1/4-inch thickness.
- Bake the dough for 18 to 20 minutes or until it is a light golden brown. Remove the pan from the oven and cool completely before adding the topping.
- Using a hand mixer, blend the cream cheese and sugar in a small bowl until creamy. Gently spread the cream cheese over the top of the cookie.
- Decorate the top of the cream cheese with our choice of fruit. Refrigerate until ready to serve.
- Cut the cookie pie into 16 wedges and serve.
