Ingredients
- 2 cups macadamia nuts soak 1-6 hours before making
- 1 tablespoon fresh lemon juice add more at the end if desired
- 1 teaspoon sea salt
- 1/4 cup water, for thinning add more as needed

Instructions
- Soak nuts 1-6 hours before making. Rinse thoroughly and place in Vitamix or high powered blender.
- Add in lemon juice, salt and 3 tablespoons water. Blend on high, stopping the machine to push nut mixture down into mixer if needed. Blend until slightly combined.
- While blender is running, slowly add in remainder of water. Blend until nut cheese is smooth and creamy. Add more water if needed. Be careful not to add too much or the cheese will become thin and runny.
- Adjust flavor by adding more salt and lemon juice if needed. Refrigerate until ready to use.
