  1. Preheat the oven to 350°F. Lightly grease a 9 x 13-inch baking pan.
  2. You will need 4 mixing bowls. Whisk the milk, apple cider vinegar, and baking soda in a small bowl and set aside.
  3. In a separate bowl, whisk the eggs until lightly foamy.
  4. In a third bowl, blend the dry ingredients including flour, baking powder, cinnamon, nutmeg, and cloves.
  5. Using a standing mixer or hand mixer, beat the shortening, granulated sugar, brown sugar and molasses in a large bowl until creamy, scraping down the sides of the bowl with a rubber spatula as needed. Add in the eggs and continue to beat until combined. Beat in the milk mixture.
  6. With the mixer running, slowly incorporate the dry ingredients into the batter until completely blended. The batter will look slightly grainy.
  7. Using a rubber spatula, stir in the walnuts and raisins, mixing lightly until just combined.
  8. Pour the batter into the cake pan and bake 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Serve warm with icecream or whip cream.
