Israel is one of the most fascinating places on earth. The rich culture and customs of this ancient land have played a significant part in shaping the history and the faith of three religions including Judaism, Christianity, and Islam. I count myself blessed to have built genuine friendships with people from each of these religions.  My friend and neighbor, Vivi is one.

More like a sister than a friend, Vivi has opened her heart and her kitchen to me and enthusiastically introduced me in  the art of Israeli cooking.

Like most cultures around the world, mothers teach their daughters to cook traditional dishes from generations past. Israeli bulgur and chickpeas is a recipe Vivi learned to make years ago.  I am grateful she shared this recipe with me.  Light and fluffy Israeli bulgur combined with the nutty flavor of chickpeas is a refreshing change from rice, potatoes, or other starchy side dishes that accompany meals.  A nice compliment to meat and fish or enjoy it alone for a light and healthy lunch.

Versatility is one benefit of this recipe. Add mushrooms, spinach, dried cranberries, feta cheese, roasted red peppers or any of your favorite ingredients to this dish and make it your own. Served warm or cold, Israeli bulgur and chickpeas is a great make-ahead dish for your next gathering.

Bulgur and Chickpeas Recipe Yum
A delightful side dish from Israel. The combination of light fluffy bulgur and nutty chickpeas creates a deliciously pleasing side dish for any meal. Get creative by adding your favorite ingredients like mushrooms, spinach, cranberries, feta cheese, or roasted peppers. There is no limit to the fun you can have with this dish.

Instructions
  1. Heat the pan on high before adding oil. Reduce the heat to medium, add 2 tablespoons of canola oil and heat for 1 minute. Add the onions and saute until translucent and slightly browned.
  2. Add garbanzo beans with its juices, stirring to combine.
  3. Stir in the bulgur, pepper, salt, and remaining 1 tablespoon canola oil. Add 1/4 cup boiling water, stir, cover and simmer on medium-low for 10 minutes. The liquid should be about 1/2-inch deep on the bottom of the pan.
  4. Remove the lid, add 1 tablespoon boiling water, stir, cover and simmer an additional 5 minutes.
  5. Transfer to serving bowl or plate and serve hot or cold.
