An unexpected but delightful collection of earthy flavors make this side dish a perfect compliment to your favorite meat recipe. The flavor profile is made up of spicy, smoky, salty, and sweet flavors with and essence of coffee, garlic, and paprika.

  1. Preheat oven to 450 degrees Fahrenheit.
  2. In a small bowl, whisk olive oil, rosemary, thyme, bbq rub, and salt. Set aside.
  3. Place carrots in a one-gallon plastic zip, pour olive oil mixture over carrots, seal bag and shake until carrots are evenly coated with oil and herbs.
  4. Pour carrots into a baking dish, add 1/8 cup water to the bottom of pan, and transfer to the oven. Bake 30-40 minutes or until the carrots are as soft as you like. Stir carrots half way between baking time, drizzle extra oil over carrots if they appear slightly dry.
  5. Remove carrots from the oven and transfer to a serving platter. Adjust seasoning to taste.
